What's your favorite campfire chow for those overnight or backcountry outings?
I have a new favorite that someone told me about, goes like this: Take a large green, red, or orange bell pepper..... cut the top off like a pumpkin and carve out the interior. Fill with preferred ingredients. Put pepper lid back on, wrap in foil, throw it in the cooler for cooking in the campfire later. Set in coals for 30-45 minutes. The sky is the limit on ingredients. I have done a Mex version... ref beans with cooked & seasoned ground beef + Picante + shredded cheese + diced tomatoes. Sour cream on the side. ... and a breakfast version... Roast beef hash + raw egg + shredded cheese. Really easy and so good at the campfire. I'm thinking of more combos that might be good. My alltime desert favorite was a Dutch Oven baked blueberry pie that Scratch or Crusty made one night at the claims.
