What's your favorite campfire chow for those overnight or backcountry outings?

I have a new favorite that someone told me about, goes like this:
Take a large green, red, or orange bell pepper..... cut the top off like a pumpkin and carve out the interior. Fill with preferred ingredients. Put pepper lid back on, wrap in foil, throw it in the cooler for cooking in the campfire later. Set in coals for 30-45 minutes.
The sky is the limit on ingredients.
I have done a Mex version... ref beans with cooked & seasoned ground beef + Picante + shredded cheese + diced tomatoes. Sour cream on the side.
... and a breakfast version... Roast beef hash + raw egg + shredded cheese.
Really easy and so good at the campfire. I'm thinking of more combos that might be good.
My alltime desert favorite was a Dutch Oven baked blueberry pie that Scratch or Crusty made one night at the claims. Damn, that was good. cloud9.gif

I make stuffed peppers at home all the time, and never thought of taking them out camping. I think one of my favorites is the foil pack Cowboy dinners, with hash browns on the bottom, cooked in the Dutch oven so the hashbrowns get crispy on the bottom. Think I'll make some for the next trip up to the claim!

I have Dutch ovens we use here at home, never thought to take them camping.
I usually save my cooler room for beer and milk and I eat canned dinty Moore or raviolis. Chef boyardee takes care of me out there!

Normally when I'm camping, food is just fuel, so I don't put much time or effort into it. A can of chili, hot dog roasted on the fire, or a freeze-dried meal gets the job done and gets me back to doing what I'm doing. But something about a long hard day's work and then a good meal out in the field sure does make the experience better

I like bacon on a stick! After you're finished you can use the stick as a bacon sickle.

Normally I am out all by my oneiz's. And then just like Crusty was saying, "pull over off the trail, shove it in, and get back at it". But this weekend was my once-a-year camping trip where I invite several different families from my community. I always invite a large group of people and most of them never been camp in the mountains before. So they rely on me to bring the fixin's and toys! This year was kind of Chaos. I brought the four-wheeler and the dirt bike, but forgot the ramp. I brought the bread and peanut butter but forgot the jelly. I bought lots of cereal... But yep, forgot the milk! Plenty of bacon on a stick though so we all had fun. Woody.

Mountain man breakfast - layer shredded hash browns, a pack of bacon, and a dozen eggs in a dutch oven for an hour @ 350

Man, that all looks delicious and camp fire cooking is the best. Winter time is my favorite time for the Dutch ovens and especially during a good storm. I can cook for hours out there in the snow and top it off with homemade brown bread ice cream! Whooohooo!

Crazysansman you are a man after my own heart! I've also cooked pork chops, beer can chicken, steaks, stir frys, to a whole turkey. I could only find one digital photo of my camp cooking as the rest are still on actual 35mm film ha ha. This one is at base camp on the 'all guys annual' just outside the BWCA in northern Minnesota as there is no motorized anything in that national forrest.. no one said cooking had to be primitive :^) by the way.. nice skills! loved the way you notched those logs to hold your dutch oven over the fire. Great pics also.

after it cooled all 4 of us pulled out our hip blades and went to town like lions on a poacher.. something so satisfying about that. Until the bear came.. smiley-shocked003.gif we could hear him all night and then found bear poop in a few spots the next morning. I'm sure after we left he was licking that picnic table top like a popsicle.

That looks great!

You mentioned beer can chicken, that's one of my wife's favorite meals that I make on the grill at home.



Here's a chicken on the grill:


Smoked turkey on the grill:


Here's Baltimore-style pit beef. You char the outside of some cheap cuts of meat, leave the center rare. Slice it very thin against the grain and serve with onions and horseradish on a kaiser roll. The thin slices against the grain makes the cheap roast very easy to chew. You'd swear it was a brisket that was cooked low and slow for 12+ hours and not a chuck roast that only cooked for 10-15 minutes.

I just cubed up a chuck roast last night for my 'Charge 3 Redbag chili'. Hmmm I will have to try that on the grill with my leftover 1.5lbs. Woohoo Horseradish on fire grilled beef.. Damn if you ain't hungry right now somethings broken inside ha ha.

Jamaican Jerk Chicken anyone??
